Ingredients
3 small cauliflower heads
1/3 cup flour
1/2 cup butter/ghee
2 1/2 cups cream 1/2 cup water mixed
2 1/2 tbsp curry powder
2 tsp turmeric
Like 3 12 oz bags of cheese
Instructions
Preheat oven to 425
Trim cauliflower and steam for like 12 minutes until tender
Drain and chop it up
In pot, heat ghee on medium
Whisk in flour, curry and turmeric, continue whisking for about a minute to toast spices and cook off flour
While whisking, pour in cream/water mix
Bring to low simmer and simmer until roux has thickened
Turn off heat and mix in ~20 ounces shredded cheese
Move chopped cauliflower to the pot with roux and mix it all together. Season with salt and pepper to taste and here is where you would add drained tuna or ground pork or whatever if you want. Also, peas are a tasty addition
Transfer the mixture to a 9×13 pan.
Cover with shredded cheese and bake for 35 minutes or the top cheese is browned and it’s all bubbly.
