
Ingredients
1 cup water
Wheat Gluten, 190g
Oat Fiber, 41g
Flax Seeds, 70g
Golden Monkfruit, 24g
Xantham Gum 0.5 tsp
Yeast, 1 package (warmed to temp recommended on package)
Eggs, Cooked, 2 jumbo
Unsalted Butter, 28g softened
Raw Honey 7g
Salt 2 tsp
Instructions:
1. In bowl of stand mixer, mix Water, Honey, eggs, yeast and butter
2. Mix all dry ingredients in another bowl
3. Put mixer bowl on mixer with paddle, add dry ingredients and run on low until combined
4. Replace paddle with kneading attachment and run on medium for 7-8 minutes stopping to form back as a ball as needed
5. Spray Pam in a bowl at least twice the size of the ball, add the dough to the bowl, then lightly spray the ball with non-stick spray. Cover with plastic wrap.
6. Place a medium size bowl of hot water in off oven. Place the dough bowl in there as well.
7. Allow dough to rise for 1.5 hours
8. Cut dough in half
9. Roll each half to create about a 15 inch long loaf
10. Cover with a towel and allow to rise another 30 minutes
11. Bake in a preheated 375° for 20-25 minutes
12. Allow to cool and enjoy!
